some favorite fun recipes of the season.....

cucumber fruit salad-chop up equal amounts of pears, apples, plums, melon and cucumber, sprinkle with lemon juice and let chill. This is great with some fresh mint, basil and/or yogurt. This is an easy side to any meal.

black eyed peas with summer veggies -put two cups of black eyed peas and 4 C. water in a crock pot or on the stove on low heat. Add one onion cut in large chunks, a few cloves of garlic or garlic powder, sprig of any fresh herbs you like(sage & oregano are good), a tsp. each or paprika and cumin. Let that cook for a few hours or if you happen to soak the beans let it cook for about an hour. Then add large chunks of tomatoes, summer squash, peppers, rutabaga and carrots. Let it cook until vegetables are tender, about another hour or so on low heat

roasted summer veggies -cut up equal amount of carrots and rutabaga in equal sized chunks, you can also do some potato in the same way. Cut up the same amount of summer squash in large chunks. You may want to also add some large pieces of onion and cabbage wedges. Toss all with olive oil, garlic, salt, pepper, some other seasonings of choice (cumin, turmeric, herbs, etc.). Then put them all in a baking dish and back until veggies are tender, about 30-40 mins. usually on 350F. For some variations you can try adding a little beer, wine, apples, peppers and other veggies. Also, something we like to do is to add some nuts and feta cheese about 10 mins. before it is all done and mix that together.

cucumber fruit punch -put lots of cucumber and whatever fruit you like chopped into chunks into a blender. add some water and lemon juice, or a little of whatever juice you might have around, then blend all together. You may want to add a little maple syrup or honey. Fresh herbs, such as mint, would also be really nice. Then take the pulp filled blended juice chill and serve with sparkling or soda water to taste.

fruit popsicles -this recipe is up to you, but take whatever chunks of fruit you have around and we recommend some chunks of cucumber, put them all in a blender with a little lemon juice. We also recommend adding some yogurt or coconut milk, otherwise add a little more juice. Blend until smooth. Add some maple syrup or agave to sweeten to taste. Then pour in cups and start to freeze. After about an hour insert sticks or spoons to the middle. Allow to freeze completely before eating. Some fun things to try...add some basil or other fresh herbs, black pepper can also be a nice alternative. For adult taste you can add just a little wine instead of juice.
